Fish Taco's
When eating healthy, you still want food that tastes good and I love inventing recipes that are delicious and good for me!
This time its, Fish Tacos - so easy but so delicious. Simply get some plain white fish, cut into strips, cover them in breadcrumbs and leave on the side and put them in the oven for 10-15 minutes, until golden brown.
Next prepare the other stuff, I used red onions, garlic, avocado, tomatoes, salsa, coriander, lime and sour cream and literally bung it all together, mix and put into the taco.
Next, I cut some sweet potatoes, put them in the microwave to soften then put them in the oven for 10 minutes until browned.
Once the fish was cooked, I placed the fillets on top of the other mixture and placed some sour cream on top and sprinkled the remaining coriander.
See - so easy, but so tasty! Served with the sweet potatoes and a lime wedge.

This was a delicious weeknight meal - panfried seabass with chorizo and prawns cooked in their own juices, buttery samphire and crispy potatoes.

I hadn't cooked anything picture worthy in a while, but this dinner I was very much looking forward to cooking.

Ingredients:
- Any white fish - I used Hake
- Cajun seasoning
- Sweet Potatoes
- Butter
- Lime
- Mango
- Pineapple
- Coriander
- Red Onion
- Spring Onion
- Salt & Pepper
Firstly, I made sure the fish was completely dry (which is important otherwise the seasoning won't stick to it.) I then covered the fish in flour, then sprinkled cajun seasoning over it with salt and pepper and left to marinate for a while.
Secondly, I prepared the sweet potato mash by microwaving 4 sweet potatoes for about 10 minutes. I then scooped the potato from the skin and put into a glass bowl with some butter and milk and mashed until smooth. I left this to one side, ready to microwave when ready to serve.
Thirdly, I prepared the salsa - I cut the pineapple and mango into small cubes and mixed together in a bowl with some thinly sliced red onion and spring onions. I then chopped up coriander into it and mixed together with the zest of half a lime. I left this in the fridge until I was ready to serve.
Then I cooked the fish - I put some coconut oil in a pan and heated it up, I then put the skin into the sizzling pan for about 2-3 minutes each side, until browned.
Whilst the fish was cooking, I put the sweet potato mash in the microwave and put the salsa onto the plates. I then cut the lime into bits and put them on the plates ready for serving.
Once the sweet mash had finished, I put a spoonful on each plate, put the fish on top and viola!
Was a delicious meal, it had the taste of the Caribbean about it and it was very healthy - bonus!

Another healthy recipe for you guys. We all know how tempting it is to get Fish & Chips Takeaway after work on a Friday, its quick convenient and yummy. But this recipe is my take on fish and chips - done the healthy way!
Slimming World, Spaghetti Carbonara, 08/06/15
As I'm trying to eat healthy - I love Slimming World recipes as they are still full of flavour and you don't even miss the unhealthy stuff!
This particular evening I decided to try the Spaghetti Carbonara, its so easy and only takes 20 minutes, making it the perfect after work dinner.
- 6 lean rashers of bacon, all visible fat removed (or Quorn bacon-style pieces - see tip)
- 4 eggs
- Salt and freshly ground black pepper
- 4 tbsp fat free natural fromage frays
- 2 level tbsp grated Parmesan cheese
- Small handful of fresh chives
- 400g dried spaghetti
Method:
- Cook the spaghetti according to the packet instructions. Drain well and return to the saucepan.
- Meanwhile, heat a large non-stick frying pan over a high heat.
- Add the bacon and dry-fry for 2-3 minutes, then turn off the heat.
- Lightly beat the eggs, season to taste and stir in the fromage frais, 1 tablespoon of Parmesan and most of the chives.
- Add the bacon to the drained spaghetti and mix well over a low heat, then remove from the heat and stir in the egg mixture.
- Toss thoroughly so that the eggs thicken in the residual heat, making a sauce that coats the pasta.
- Scatter over the remaining Parmesan and chives and serve hot.
I didn't have any chives so used Spring Onions - it was delicious and filling and I really enjoyed this dinner!
Healthy Recipe - Honey Baked Chicken, 27/04/15
Baked Honey Garlic Chicken
I'm trying to eat healthy at the moment and we all know how boring salads can get so I'm always on the look out for new healthy recipes that are delicious and filling, so that I don't miss the carbs and fatty foods. I was browsing the web and found a few food bloggers that cook regularly and I came across Damn Delicious who has hundreds of tasty recipes on her blog, all of which I want to try!
Ingredients:
- Chicken
- 2 large eggs
- 1 cup Panko breadcrumbs
- 1/3 cup of honey
- 4 cloves of garlic
- 2 tablespoons soy sauce
- 1 tablespoon cornflour
- 2 spring onions
- 2 tablespoons of sesame seeds
This is so easy to make and so delicious. I served it with some rice.
- Preheat oven to 400. Lightly oil a baking dish or coat with nonstick spray.
- Season chicken with salt and pepper, to taste. Working in batches, dip chicken into eggs, then dip in Panko, pressing to coat.
- Add chicken to prepared baking dish. Place into oven and bake until golden brown and crisp, about 15-20 minutes.
- In a medium saucepan over medium high heat, combine honey, garlic and soy sauce. In a small bowl, combine cornstarch and 1/3 cup water. Stir mixture into the saucepan until thickened, about 1-2 minutes. Stir in chicken and gently toss to combine.
- Serve immediately, garnished with green onions and sesame seeds, if desired.
Healthy Dinner, Smoked Mackerel Cous Cous Salad
Smoked Mackerel Cous Cous Salad
Ingredients:
- Smoked Mackerel
- Cous Cous
- Spring Onions
- Mint
- Red Onions
- Lemon
- Salt & Pepper
This is such a simple dinner to make, perfect for a week night after work AND its very healthy, full of speed veg, protein but no carbs or sugar.
Simply, cut the red onions, spring onions, mint and any other vegetables you may have left over in the fridge into little cubes, as small as possible is better.
Put the vegetables/fruit into a bowl, shred the smoked mackerel into strips, add that into the bowl, mix with together.
Lastly, add hot water to the Cous Cous, leave to settle for 10 minutes, once cooked, add to the bowl ad mix the vegetables and smoked mackerel in so thats its all combined. Drizzle with lemon and season. Serve.
Very delicious, colourful and healthy! I love this dish and make it regularly.

Roasted Cod with Parma Ham & Roasted Veg
This recipe is from the Hairy Bikers Healthy Eating books and it was delicious!
You need:
- 1 red pepper
- 1 yellow pepper
- 2 medium courgettes
- 1 medium red onion
- 1 tbsp olive oii
- 4 x cod fillets
- 4 slices of parma ham
Simply - preheat the oven to 220. Cut the peppers, courgettes and red onion into chunks and place in a large baking tray. Drizzle with oil and add plenty of salt and black pepper. Toss everything together and roast for 20 minutes.
- 10g breadcrumbs
- 10g parmesan cheese
- 2 tbsp finely chopped parsley
- 2-3 tsp balsamic vinegar
- sea salt
- black pepper
Pat the fish dry, season with salt and pepper and wrap each fillet with parma ham.
Take the baking tray out of the oven and make space for the cod.
Mix the breadcrumbs with the cheese and parsley and scatter over the cod and the vegetables.
Place the baking tray in the oven for 12-15 minutes until the fish is cooked. Drizzle balsamic vinegar over and serve!

As January came, so did the healthy eating and I thought this was a perfectly good opportunity to make some healthy food - but we all get those sweet cravings and I found this recipe in the Hairy Bikers Diet book and thought they sounded delicious.
They are very cheap and easy to make too - most the ingredients you will probably have in your own home!

Wow, this is a first for me! I decided to cook my first ever roast dinner-big step! I felt nervous about this to be honest as it always looks so complicated but I was going to help with Christmas dinner this year so therefore I needed some practice, can't be ruining Christmas dinner!!
I decided to cook roast beef with roast potatoes, honey roasted carrots and parsnips, peas with bacon and leeks and Yorkshire puddings.

This is a slightly different post as I'm talking about a meal I cooked myself at home for mum, dad and me. I've got really into cooking and enjoy it so this particular night I decided to cook again. I found this recipe on Jamie Oliver's app on my phone and it stood out to me as I find salmon quite boring usually but I thought this might jazz up salmon a bit and it was an experiment for me as I have never made anything like this before.
