Homemade Dinner, Fiesta Tacos 25/11/13



Another home cooked dinner, I'm getting very used to this cooking for myself and other people malarky! This time a Jamie Oliver recipe:








Ingredients 

1 teaspoon of paprika
1 teaspoon of fennel
200g pork belly
Olive oil
1 ripe avocado
2 large ripe tomatoes
1 fresh red chilli
200g haricot beans
2 limes
sea salt
freshly ground pepper
1 teaspoon of honey
6 taco shells
fresh coriander
1 lime
fat-free natural yoghurt

I did this recipe slightly different to how it said, I used chicken instead of pork belly as its easier and wouldn't take as long too cook. However it tasted exactly the same and didn't make much difference. I also couldn't find haircot beans in Tesco so therefore used Cannelloni beans as they are pretty much exactly the same.

Method

Firstly I seasoned the a board with the paprika and fennel seeds and tossed the diced chicken in it.
Place a large frying pan on the hob with a splash of oil and slightly cook the chicken until golden-for around 5-10 minutes
Meanwhile, cut the avocado in half and take the stone out, use a spoon to take the avocado out away from the flesh, then cut into 1cm diced cubes, then chop the tomatoes into a similar size, finely chop the chilli and toss it all together like a salad-drizzle with some lime
By now the chicken was cooked perfectly and I added in the beans and cooked for a further couple of minutes, after a couple of minutes-add in some honey and stir until all covered in honey and well combined.
Get the tacos, and serve!

It was so delicious, I would love to try it with the pork belly and see what is was like but it really was so yummy! And reasonably healthy.
