Homecooked Dinner, Tuna & Sweetcorn Burgers- 8/07/2014

I'm cooking again! I'm obsessed now - I love cooking! This time a very summery, light and healthy dish.

Tuna & Sweetcorn Burgers served with Sweet Potato Mash & Salad

I got this recipe from the Good Food website.


Ingredients

85g white bread, torn into pieces
198g can sweetcorn
2 x 185g cans tuna 
25g grated cheddar
3 spring onions, finely chopped
1 egg, beaten
2 tbsp vegetable oil
bread rolls, lettuce and salsa to serve

They are very easy to make, only take about 15 minutes to prepare and 10 minutes to cook, so its the perfect dish to make after work.


Method

1. Whizz the bread in a food processor till breadcrumbs, keep in a separate bowl
2. Whizz half the sweetcorn, leaving some corn whole. 
3. Add the rest of the corn, cheese, spring onions, tuna and seasoning into a bowl and add the breadcrumbs in and mix
4. Add the egg, bit by bit until mixture is sticky enough to make into burgers and leave to set on the side
5. Heat oil in a non-stick pan, cook burgers for 5 minutes each side until golden
6. Serve in toasted buns with lettuce



Whilst the tuna burgers are setting, you can make the sweet potato mash. I find the easiest way to do it is pierce a few sweet potatoes with a fork and put in the microwave for 10 minutes each side until they are softer. Once soft enough, cut in half with a knife and scoop out the mash into a bowl, throw away the skin. Add butter, oil, salt and pepper into the sweet mash and viola! The quick, easy way to make sweet potato mash!











Very yummy and only 400 calories! Perfect for those healthy summer nights.
