Yes, cooking again. I can't get enough!

Fish Lasagne served with Garlic Bread

This dish was a meal on the menu at The Fleur De Lys- where I worked and I really wanted to try it! I found a recipe online and made it.. very glad I did!

Ingredients:
  • White Fish
  • Prawns
  • Smoked Fish
  • 1 litre milk
  • 2 bay leaves
  • 1 garlic clove
  • 40g unsalted butter
  • 50g plain flour
  • 1 tsp English mustard
  • 400g lasagne sheets
  • baby spinach
  • 150g grated cheese

Method:

  1. Preheat the oven to 180C
  2. Place milk, bay leaves and garlic in a pan over a medium heat and bring to a scalding point-remove from heat
  3. Melt butter in a separate pan over low heat, stir in flour and cook 2-3 minutes stirring constantly
  4. Remove bay leaves and garlic from milk, add a little of milk to the flour and butter mixture. Stir to make a paste and cook out for 1-2 minutes, stirring constantly
  5. Gradually add splashes of milk, stirring all the time until thick, smooth-sauce like
  6. Gradually add rest of the milk, adding little bits at a time and brining to the boil before adding more milk. Repeat until all the milk has been added, take off heat and add mustard and season well.
  7. Place a spoonful of sauce into a greased oven proof dish to cover the bottom, cover with a couple of lasagne sheets
  8. Stir the fish, seafood and spinach to the remaining sauce and stir well until combined
  9. Spoon some of the fish sauce mixture onto the lasagne sheets and top with another layer of lasagne sheets. Repeat until all the fish and sauce mixture has been used up. The final layer should be lasagne sheets
  10. Sprinkle the top with the cheese, transfer to the oven and bake for 30-40 minutes.
 

I was very impressed how it looked. It was incredibly tasty too, very rich and fishy! A nice different touch to normal lasagne, yummy! Just takes quite a while to prepare.
